Prep time: 5 min | Cook time: 10–12 min | Serves: 1–2
Ingredients
-
3 large eggs
-
2 tbsp milk or heavy cream (for extra fluffiness)
-
1/4 cup cherry tomatoes, halved
-
1/4 cup shredded cheese (cheddar, feta, or mozzarella)
-
Handful of baby spinach, roughly chopped
-
Salt & black pepper to taste
-
Optional: A pinch of red pepper flakes or dried oregano
Instructions
-
Prep the Pan: Grease a small cake pan or a silicone mold that fits inside your air fryer basket with butter or non-stick spray.
-
Whisk: In a bowl, whisk the eggs, milk, salt, and pepper until well combined.
-
Assemble: Place the chopped spinach and halved tomatoes into the bottom of the prepared pan. Pour the egg mixture over the vegetables.
-
Top: Sprinkle the shredded cheese evenly over the top.
-
Air Fry: Place the pan into the air fryer basket. Cook at 350°F for 10–12 minutes.
Pro Tip: Check at the 10-minute mark. The center should be set but slightly “jiggly,” and the top should be golden brown.
-
Rest: Let it sit for 2 minutes before slicing. This helps it firm up so it doesn’t fall apart.
Customization Ideas
-
The “Meat Lover”: Add precooked bacon bits or crumbled sausage.
-
The “Mediterranean”: Use feta cheese, Kalamata olives, and sundried tomatoes.
-
The “Kitchen Sink”: Throw in any leftover roasted veggies from dinner.
